Wheat and corn are pretty cheap and plentiful, even in the most rural areas. There are some alternate grains, but ALL GRAINS are labor-intensive to process. Chaff and straw have to be removed, and without some sort of DIY automation you will be exhausted before you've even begun. Making grains into flour is a whole different project.

Sow, grow, wait for perfect weather then cut, separate heads from stalks, separate the grains from chaff, grind multiple times, then you'll have rough, brown, whole-wheat flour. It took 4-8 months to grow then a 40+ hour work week for you and whoever you can wrangle to hand-craft the cheapest item in the grocery store.
