The first foxfire book is a pretty good resource. Breaks it into a few major segments outlining more traditional methods as well as modern methods for constructing a cabin in an Appalachian style. Maybe volunteer for habitat for humanity if that's an option. With a skill like carpentry practice is gonna go a long way.

Don’t build a log cabin, it’s super inefficient in both wood use and insulation. Also, when logs dry, they create gaps, and maintenance is a huge PITA. Windows and doors are a total pain too.

Build a slab side cabin instead. Less wood, better ability to insulate, easier maintenance.
