If the goal was to cause damage then those mudders/bikers would be out there with excavators tearing up the land or hacking down trees with chainsaws instead.
Motocross/enduro bikes being ridden anywehere above walking pace will tear up loose ground because they simply have so much power and torque for their weight that any acceleration will cause some amount of wheel spin. Limiting yourself to speeds and movement that would not damage the ground would basically defeat the point of riding such a machine.
tl;dr Nobody is actively trying to destroy the land, everyone wants to enjoy their own particular hobby and you're right in that if those hobbies conflict in some way then they should have their own spaces set aside.
