Google "Kudlik", the traditional Inuit "lamp" used for light and heating, it uses seal-oil or blubber for fuel. Still they had to get some plant material like arctic cottongrass which is used for many applications.
Vikings rarely lived anywhere where growing crops was completely impossible. Raising grass eating livestock was a good idea. In terms of crops, barley, rye and oats where the most common. The populations on Iceland and Greenland were never really big though. And always close to the coast so fishing was possible.
