I use a kevlar ursack along with scent proof trash bags.
I have a bear canister, but I've never used it, because I typically go on multi-day trips, and the bear canister takes up way too much room in my pack, and seem to be impossible to pack around.
The ursack weighs the same, holds more food, and its much more accommodating in my pack.
I backpack in mountain lion territory, so I always follow the recommended 200 ft away from camp for meals and food storage.
Luckily never had an encounter, but while on a day hike I heard one while hiking up the side of a big rocky saddle. It was likely a half mile away, because we were basically hiking in an echo chamber. It was a humbling and inspiring thing. Sounded exactly like you think it would.
