You have bulk amounts of stuff you want to preserve or want to save money in the long run. I actually grow and raise a lot of stuff so a dehydrator is a must. I get like 7-12 eggs a day from my chickens, turkeys, and ducks. Though, I normally freeze extra, uncooked, scrambled eggs in small batches, which are used for recipes like pumpkin pies and such. Dehydrated eggs are really only for super hot summers where temps are 95-110F.
Once you get a nice dehydrator you suddenly realize how much you can do with them. Like you can make an entire meal then dehydrated it, vacuum pack it, and have them as MREs or just to be rehydrated at the campsite. That can be spaghetti, mac-n-cheese, sloppy joe/hotdog sauce, stews, etc.
