-Baselayer shirt, whatever. Woven linen is the historical material for europe. Cotton for americans, but it's functionally inferior to linen.
-Melton wool vest, for that core protection and for warmer weather
-Melton blouson jacket, think ike jacket. Lighter than a full jacket.
-Melton coat, double button row for that front seal. Lined in a second layer of wool, at least around the torso.
-Impregnated strichloden cloak (special kind of melton/felted wool with a brushed surface for water repellency)
-Linen pants
-Wool pants for cool or cold weather
-Wool underpants (knit) for really cold weather
In all five layers of wool on the torso, three on the arms and 2.5 (long coat) around the legs. That should be enough for most cold weather.
