If you don't have those soil microbes, worms work just as well, and those worms will typically also be playing host to some of those handy little microbes.
The point is to convert unwanted food waste into the base inputs for growing more stuff.
The worms also will move out from the tube into the surrounding soil, spreading microbes, nutrients, and aerating soil as they go. These worms can be what tips dead, infertile soil, into active cultivateable soil.
So if you grow shit, these little guys are your best friends. Especially if your aiming to sustainably grow via closed loop (all waste output becomes inputs for other stages of the system) cultivation techniques.
So in short, it jump starts waste disposal, and soil conditioning. You wouldn't want to fish with them until you've given it enough time for the worm population to increase.
