Sugar is metabolized VERY quickly into glucose, when glucose is too high, the body produces insulin and stores the glucose as fat, then excess insulin makes you hungry again. Sugar is your enemy, slow carbs are fine in reasonable amounts. Fat on the other hand is metabolized very slowly, providing consistent energy and not spiking glucose, so it doesn't get stored if you're eating it in reasonable amounts, but lean towards healthier fats like olive and avocado oil. Tomato leaves also help break down stored fat more quickly; a 50/50 mix of tomato leaf and spinach salad with oil and vinegar dressing and some sprouts for lunch every day will help tremendously.
tldr: No sugar, limited carbs, lots of salad and healthy fats.

Bring lots of water and just walk. Walking is less intense cardio, but can be maintained much longer than running. Try to cycle through multiple different hikes, so when you get back to a place you haven't been in a week, you see noticeable gains in distance. Maintaining motivation is a psychological game that you have to beat yourself at.
