You could clean a full dear with a Buck 110 in 420HC and it'd still be working sharp. And to bring it back to razor, it'd require basically a minute on with ceramic.
For typical /out/ stuff, you want toughness, so it can handle impacts from chopping, and stainless really comes in handy, though it's not needed. 420HC and 12c27 (Mora) are good choices if you like the knives they come in; both are similar enough, with the latter being a little better in edge retention, but you won't notice it.
