Here's what I usually pack for longer walks - dirt cheap and lasts for ages. There isn't much of a market for dried/packaged food in my country so all you seppos will have a wider range to choose from.
>breakfast
Usually porridge, about 60g per day. Chucking in a handful of nuts and fruit livens it up a bit. Muesli bars also work if you want a quick start without cooking.
>Lunch
Generally crackers and cheese with a bit of protein (salami/tuna)
>Dinner
Having a wide selection of proteins, carbs, veggies and flavour combos to work with helps give you a bit of variety. For me it's usually:
>protein
dehydrated mince, TVP, lentils, tuna, dehydrated eggs, salami
>carbs
pasta, cous cous, rice, oats, instant mash
>veggies/healthy shit
dehydrated peas/carrots/corn, sundried tomatos, dried onions
>flavour
spices, stock powder/cubes, tomato paste, garlic powder
Just pick one from each of the categories and you're golden. Pretty much anything is edible if you've been walking all day. A favourite of mine is a kinda soup thing with custard powder and chicken stock cubes (tastes a lot better than it sounds).
A bit of a long and rambling post, but the point is that you don't have to eat expensive prepackaged meals if you just stick to the basics.
