Rainier is worth checking out at least once. A dayhike up to Camp Muir and back is fun. You can do the full thing if you want to pay an expedition guide or do it yourself if you know basic alpinism
The Northern Cascades near the Canada border is good. It's pretty desolate
And then of course the olympics. It's a bitch to get to but it's also fairly quiet there. You can go far out East if you want some California style rolling hills and a bit more tundra-like environments
