For tools I just have the usual metric stuff, nothing special. Maybe some extra heavy duty tire spoons since the Heidenau K60 tires I’m running have a concentration camp-tier walls.
When it comes to out gear I think of motocamping on a big torquey bike like the AT be a step between backpacking and car camping. Weight is an issue but you have room to play around.
I run standard sprockets since the AT is torquey enough already. The only thing I’ve done besides crash protection and boxes is get a more comfortable and grippy seat and K&N air filters. Oh and added an ECU in anticipation of getting a new exhaust and headers.
