There is a 'big' difference between a 700 and an AI. AIs don't have safetys that fail and rifles going out with rust. AI didn't go bankrupt from putting out bad guns.
If they can do the same things why aren't the best shooters using Remington 700s? Maybe because they don't?
1100 might be able to knock birds from the sky but again they aren't used by insane round count shooters. I probably couldn't see much difference between an 1100 and a silver pigeon at least in my ability to hit targets. In the 700 vs AI comparison, I'd see a big difference, but that's because I do my share of precision shooting.
It just depends on your expectations and ability. If I just want my knives to cut and my guns to shoot, I'd be happy with Gerber and Remington.
If I'm looking for 'super steels' for edge retention and precision (half moa) guns, probably not as happy with Gerber and Remington.
I'm not trying to sound elitist and I don't really disagree with you, as your comparison is true for almost everyone.
For knives, there still can be significant differences. Materials and design matter. The differences in steels is amazing. It really is. Handle material while important, I'd place less value on it.
