I want to go out on a trip in the kinsman range in NH soon. I haven't hiked during the winter before. What do I need? Also, I lost my knife recently. How bad do I need a knife? I don't want to buy one unless I really need it. I only plan on heading out for about 2-3 days.

First concern should be frostbite potential. Make sure you have thermally insulated boots and gloves as well as good snowshoes.

Also just judging by your apparent inexperience I wouldn't recommend anything untrafficed and elevated

As a homeless person I disagree. You do need need to build shelter, you do need to insulate, and you do need to eat, that can all be done pretty cheaply.
