Oil changes and air filter cleaning every 25-30 hours ride time (once, maybe twice a month during the riding season, then once every 2 months through the winter). It's a 45-minute job start-to-finish, and the oil's $20 a gallon at walmart (a gallon will do about 2.5 oil changes).
Change the fork oil and seals every year or two.
Clean/adjust carb as needed. Since it never sits for more than a few weeks, it doesn't have time to gum up. I've got a summer, spring/fall, and winter carb setup... minor tweaks to account for the riding i'm doing and the temperatures.
Keep on the small stuff, don't let it turn into big stuff.
Valves I adjust every 3-4 months (2-hour job, have to drain coolant and remove rads, the actual valve adjust job is maybe 15 minutes).
Top-end every year or two, cylinder replate every other year, otherwise just run a hone through it. That's about a week down-time... order parts the week before, one weekend to tear it all down and ship parts out, couple days turnaround time, then get all the parts in and put it all back together.
Doing the work yourself saves a ton of money, and with some basic tools there's not much you can't do on it. Splitting the case half requires a big 27mm socket and air impact, other than that it's all hand tools.
She's a pretty easy keeper.
