Most cheap knives will have one tempering hardness through their entire blank while more expensive knives will often have spring steel tempering at the spine and harder tempering at the knife edge. The knife in that image appears to have one hardness through its entire blank. That is typical of a Mora Garberg which is Rockwell 58 hardness. You'd need a softer knife to be abusing it like that. Nothing over Rockwell 55 for the spine, but 58 for the edge. The Garberg is just 58 all the way through.
