On bigger trees I have trouble lining up my sloping cut with my gunning cut using conventional but for some reason can cut out perfect notches with humboldt.

Humbolt is objectively best because of how the tree moves after the face closes. However I'm lazy and usually do conventional because I fall mostly spruce which is easy as fuck tree.

Depends on my tools and the situation. With a saw, I usually cut the conventional way, but will cut the notch upside down (what you call "Humboldt") on backhangers so I can get the tree wedged up without cutting through.
with an axe, the "open face" way is the only one that's possible.
