If you're camping around fresh water near a lot of grass and bushes at the right time of year they could last until the season ends.
If you want a hardy animal to do hardy shit look at mules. Donkey male + Horse female = 1 hardy son of a bitch that eats less, lives longer, is more surefooted, has much better self-preservation instincts than a horse, typically have healthier hooves (though mules can have either donky-like or horse-like hooves and theres a difference)
Their self preservation instincts would serve well. They graze smartly and wont let you work them to death like a horse would.
"Stubborn as a mule" is a thing because mules wont let you work them to death or under uncomfortable conditions, whereas horses will for example, ride very long distances with an improperly placed saddle/other piece of tack that can damage them and a mule wont let you get away with that
