If you're out longer, you need to divide urine and feces, otherwise it won't rot properly. The easiest way to do that is with a divided seat like most compost toilets use. Other options include a wooden crate (where the excess fluid will flow out and can be collected) or simply pissing into a bucket. That way, the urine can be used as liquid fertilizer, though you shouldn't use it on food if you're taking medication.
If you want to be self sufficient (also dealing with water that has soap or detergents in it), building a biologic sewage system is the way to go, but a septic tank is also an option as long as you can get it emptied regularly. You'd be wasting fertilizer though.
