What is your preference when it comes to length? Is anything over 150-180mm worth it?

That's what it comes down to though. For most work, a 10cm blade is enough. That's also the size most traditional styles are. However, a larger knife can replace a hatchet for many tasks, so if you're going to be chopping a lot, a 30cm blade is worth it.
