The kind of non-nuclear AIP used by German/Swedish subs require super well insulated cryogenic tanks that can hold liquid oxygen (-183C) for weeks at a time, and they're only good for coastal patrols, they don't range far out to sea on extended cruises like nuclear submarines. Also, a stirling engine is pretty much impossible to nigger-rig because they require extremely exotic materials to be able to function at high temperature / low friction with zero lubrication.
Your best bet would probably be a molten-salt reservoir taking advantage of the latent heat of a molten Potassium/Sodium nitrate mixture using thermometric generators to convert the heat into power, but that's stupid as fuck when you can just get a bunch of batteries
