If its tough, cook it low and slow
Bad flavor is likely due to diet, so it can vary from animal to animal
Most flavor is in the fat, if it's bad, remove as much if it as you can
You can always cover up bad flavors with fuck tons of spices, there's a reason everything's spicy in poopoo countries.
