100 dandelions heads
4 cups of water
A tea spoon of vanilla essence
A sliced lemon
An apple, cut into cubes
2 cups of sugar
Collect your dandelions and spread them all out on a surface, this is to let the bugs get out. You can always leave them in a bowl of water for five minutes, but this apparently lessens the flavour.
Place all your ingredients except the sugar in a sauce pan, cover it, bring to the boil and then let simmer for half an hour. I didn't use apples in mine but I heard that they're really good for it.
Once it's simmered for half an hour, drain the tea into another saucepan making sure you've collected all the solids. Dispose of them. Now you can leave the tea to stew off the heat for a few hours, but apparently this adds a bitter taste so just continue to the next step.
Add the sugar and stir briefly just to make sure its incorporated into the tea. Now simmer the liquid on the lowest heat for two hours or until it has reduced by a third. You want the liquid to look a dark golden colour. The consistency will still be quite watery near the end but don't worry, it will thicken up.
Once it has reduced, pour the liquid into a jar. Seal the jar and place in a cupboard, it'll harden up within a couple of hours.
