Surveying, prospecting, surveillance, measuring... Repair of remote equipment (masts, turbines, pumping stations) would count, as would being stationed somewhere to look after said equipment. Tree felling, forest management... Then there's guide work. Fishing guide, hunting guide, trekking/backpacking/nature guide. Biologist. Conservationist. Arborist.
Construction work in remote areas (masts, power lines, roads, fences).
But yeah, if an /out/ career means camping with a backpack, then your options are somewhat limited.
