>>1767934Mines a sourdough but you don't need the sourdough starter to make this, it'll still be a good artisan type bread.
•2.5 cups flour (I use unbleached but any works)
•1 cup warm filtered water
• 1/2 teaspoon salt
•1 tablespoon dark brown sugar
•1 cup sourdough starter
If you're not doing sourdough
•3 cups flour
•1.5 cups water
• same salt and sugar
•1 teaspoon bread yeast (I've used champagne yeast with good results, bigger bubbles and unique taste)
-heat oven on lowest setting then !!turn off!! when preheating is done
-Mix dry ingredients together
-Mix wet ingredients and sourdough starter together
-mix everything together
-kneed until smooth and put in a bowl with parchment paper underneath and a dry towel on top.
-place dough in oven (this is why you turn the oven off, you just want a warm environment for the yeast not to cook yet)
At this point let the dough rise for 8-12 hours, the longer the better.
Take bread out and preheat oven to 450 with the dish you will cook your bread in, in the oven. I use a round douchoven, but you can use a 9" cake pan or cast iron pan.
While preheating, turn dough out carefully. Carefully shape the dough without compressing it, and let it sit minimum 30 mins before cooking.
Once that's all done bake bread for 30 mins, take out and let sit for 15 mins before slicing.
