I honestly have not done much in the way of dessert while /out/. Basically just fruit based bakes in various form. Peaches seem to be ideal. Cook better than apples and give a more rich texture while still transporting decently and can just be accompanied by a spice and carb blend. I like the banana trick OP posted because of its self contained cooking though. I prefer not to bring much in the way of cooking materials due to weight and the enjoyment of a different style of cooking. Cutting spits or making a grill out of wood or utilizing rocks or the coals is just more fun for me than packing in a pan or pot.
I wonder if you could prepare a soup in a fruit/vegetable rind? While trying to think of other self contained preparations this just occurred to me. Has anyone done this?
