Tried asking this on /ck/ but apparently no one there actually knows about food.

I'm wanting to dehydrate fruits and vegetables, I was going to buy a dehydrator but then read I can just do it in my oven. Anyone have experience with dehydrating in the oven and have any tips? What's your experience with the difference using your oven and using an actual dehydrator?

I've dehydrated tons of fruit in an actual machine and it's awesome and such a passuve activity that it doesn't interfere with life and is retard proof. I have tried making jerky in both though and I can say that in the oven i just made tiny pieces of cooked meat that tasted and rotted like a pieces of meat.
I know it's not really a proper answer to your question sorry but i can't help but advocate for getting a dehydrator because they're awesome and I got mine used for ~$5

I don't do it but my parents do, they just leave it with the door slightly open. It takes couple of weeks or so for apple slices and what not. You do need to use a tray that lets air from below though, stuff like in your pic wont work without you flipping everything every day.

I have no suggestions if you want to actually cook them in the oven and be done the same day.

I do have a dehydrator but the amount of electricity consumed makes the shit as expensive as store bought.

I have a smoker for meat and have made a lot of jerky, you should get one! But it doesn't work too well for vegetables and fruits unless you are eating them that day. I don't really trust used stuff that's for food, but I'll probably break down and buy a new one if the oven method doesn't work well.

You're first paragraph was pretty much what I was looking for, if it's taking a week then I'll just get a dehydrator. How thin are your parents cutting the fruits? The sources I'm reading online says it just takes a day or 2.

nah there's a couple folks here on /out/ who dehydrate jerky in their ovens, but seems like most people dehydrating vegetables/meals use a dedicated dehydrator. There'll be enough replies for OP to give it a start

I think ovens have trouble keeping such a low temp. When you cook dry brined steaks, Aton Brown suggest you bake them at 200° but keep a pizza stone (or straight up bricks) in there to compensate for heat loss between cycles.

I did. I was just saying that if you're using your oven instead of buying a cheap machine specifically designed to do the task then you're probably a little slow when it comes to cost/savings analysis and probably everything in general.

at work we dry onions and garlic and herbs for later use by spreading them thin on large steel trays and leaving them in the gas ovens overnight with the pilot on
you want to keep the temp at about 130-140F
the main difference with a purpose built dehydrator is fans to remove the moisture from the air around the food which speeds things up so crack the oven door a bit if you're drying high moisture foods like apples or tomatoes

Leave your oven on it's lowest heat setting and prop the door open to it's first stop ot less and this will allow the heat to dehydrate your stuff faster without baking it.
Low and slow, but shouldn't take a week, maybe a hrs to a day or so depending on thickness, product etc.

I have done some fruit leather dehydrated in an AGA, works well but you do have to watch it as it can start to cook/burn.

The ancient method of hanging up a chunk of salty meat in a cellar works well too (cellar required) however a meat curing "dry bag" works

I bought a shitty Walmart dehydrator for $30 and have been dehydrating all my /out/ meals for a month or so now. I absolutely love it. Here's my favorite recipe:

-Dehydrated rice (cooked in chicken broth before dehydro)
-Dehydrated ground beef (93% lean, cooked and spiced with pepper, onion powder, and onions before dehydro)
-Dehydrated salsa leather
-Dehydrated onions and garlic

Boil some water on the trail and throw all that shit in. It rehydrates in less than 2 minutes and tastes better than some home cooked meals I've had. Optional: bring some tortillas and make a burrito out of it.

It’ll be better if you use a log burner or fire somehow, as that means you aren’t burning electricity

Little chunks of onion and garlic are what I do most often and those are quick. Maybe 3 hours or so. Larger pieces of vegetables might take 6-8 hours at most.

Most people who stick with dehydrating buy a dehydrator because doing it in the oven is the pits. First off energy use is huge in the oven since you're wasting most of the energy with the open door, and have not nearly as much low end control over temperature. It works but only just it's a good experiment to see if you like the results but you're going to work for them.

You can do it, but like the others said you need to keep a close eye on it. I got my dehydrator used for 50 bucks, I use it like 6 times a year for camping/ backpacking prep and consider it money well spent. I would look for a model with a timer for even more convenience, I make everything overnight when power is cheap and you don't have to hear the fan roar

Yeah that does suck. I have an outlet timer that I got for a buck at a thrift shop and I just use that if I'm going to run it overnight. Not ideal but it works.

I once made a tower with a 2x2' box fan at the base and put 3 feet of walls above it with about 4 microwire shelves. the box fan was raised 2.5 ft on legs and would dehydrate the shit outta whatever I put on those shelves

throw it under a hot light and you're dehydrating like a boss

otherwise just get a dehydrator, they're cheap used and work very well. oven is pleb, air flow > heat

No they come raw. Cooking then dehydrating reduces cook time significantly. Also beans have to be cooked because they contain lectin. So by precooking then dehydrating you could do a cold soak quickly and without poisoning yourself.
