How long could I survive wild camping with a relatively light bag and without hunting/fishing? I want to get away from society and travel across my country for at least a couple months.

Here's an honest answer OP. Surviving in the wild and foraging food is a meme - you're investing more energy than you're getting in return. You'll be literally starving.
Without food but with plenty of water you could survive even a month (it depends on how fat you are currently), but in the last weeks you'll be too weak to do anything.

However many days your food lasts you plus a month or so of misery beyond that. Why not just plan on restocking twice a month or so? How big is your country where you can move for weeks without reaching a town?

He is right. Think about hunter/gatherers in Africa. They are constantly going hand to mouth waiting for their next meal. Not hunting/fishing is really going to cramp your style. Insects is just about your only other source of protein so get used to looking for grubs and worms. Can eat tree bark. Tons of wild edibles. I know Ill get flamed (and probably deserve it) but I remember watching an episode of naked and afraid and there was a vegan on there. She ate the fuck out of everything and just couldn't get enough energy to keep going.

Depends entirely what kind of edibles grows in your country. In Finland you could probably last for some time since mushrooms, nuts and berries are plentiful in late summer and early fall.
