1. Good n simple. Have a pit 3ft x 2ft
Burn a good fire of mesquite till a bed of live coals about four inches thick.
This you leave for on and head and feet. Just gut well, wash out. Stuff desert sage in cavity, rough sew back hide chest to groin.
Place on coals (also save a half shovel of coals to place on top later.)
Get a piece of tin or some sort of flat metal or something to place over coal pit.
Cover well, try not to get dirt on rabbit, make it air-proof as possible around edges. Cover with dirt around edge of tin/other.
When done that, place shovel of coals on center of tin, add wood enough for a little fire on top.
Leave overnight.
In morning remove dirt and ash (carefully not to get inside pit) off off cover. Tip cover off.
Remove rabbit.
Entire thing should be well done, tender and juicy. The ears were a delicacy. The rest of skin can be pulled off, eat the rest.
2. Otherwise boil high heat in big pot with couple teaspoons of salt for a few hours, add water as it boils off. Last hour add potatoes n onions pepper or spices. Add flour for thick gravy. Good by itself or Serve with beans and bread.
3. Pan fry. Never comes out right. Just nope.
