The short hair or piled pelts would carry a lot of frost build up after a while. Beaver, seal, otter, water rat/river rat have been used for shedding water, as another anon said, and are typically as expensive as the luxury pelts like mink. Deer skin makes the softest leather but I've never seen a pelt prepared that way. Buffalo would be the most traditionally /out/.
