Well first of all, i would never go alone. I'd take a like-minded, well-trained friend, or a dog. A stray dog. But i'll say what's my plan if i had to go alone:
Since I live in Brazil, it would be easier for me to do this kind of thing since i don't have to worry about dying from cold or dehydration. Probably somewhere on central Brazil(Goiás, Mato Grosso, Tocantins, etc.) would be nice, since there's very little human presence and plenty of fish and fruit.
Here's what i'd take:
Bike, 4 pants, 6 shirts, a waterproof blanket, a 5x5m plastic sheet that can withstand wear and tear, some basic survival tools(water tablets, two sturdy knives, a roll of good paracord, compass, sewing kit, lighters etc.), enough food for a week or so(some dehydrated fruit, a bottle of honey and whatnot), spare shoes, seeds to a couple dozen edible plants, first aid(include tropical disease prevention/treatment) and some other stuff(i guess you guys are knowledgeable enough to fill the blanks here).
Also an emergency phone, fully charged, turned off and waterproofed inside a condom, since dying from a snake bite or trapped inside a hole is NO FUN.
And here's my plan:
I'd prepare two backpacks, one with essential/constant use(emergency food, first aid, knife, paracord, dry clothes etc.) and one with the long-term stuff(food, spare knife, plastic sheet, spare clothes etc.) and head by train with my bike to the heart of the countryside.
One backpack on my back, the other one on the bike. I'd find a remote spot by a river, set up camp(basic elevated hut with the plastic sheet, since ants and spiders are everywhere), eat a meal and sleep.
The next day i set up my subsistence garden, sow the seeds, make myself half a dozen fishing poles, hop up on my bike with the backpack and start looking for basic resources like dry firewood, fruit trees, good fishing spots, emergency runaway routes and so on. On the way back, i fish until it's dark.
