The fact that coronavirus happened to come from a bat was because bats are excellent reservoirs of weird viruses. Historically though, just about every deadly disease humans have ever come into contact with have resulted from our close proximity to domesticated animals. It's why the Spanish never caught anything besides Syphilis from Native Americans. The natives never raised animals.
So yeah, genetically engineer a virus some animal already has. I picked swine flu since North Carolina allegedly has a lot of pig farms. Closer to the eastern seaboard. By contrast I'm not sure I've ever seen anyone really raise pigs out in the west.
A fatality rate of approximately 1/8th would in all likelihood destabilize things so that the human population would undergo a slow, inexorable decline.
Frankly, it's a miracle someone hasn't CRISPR'd something up by now. Then again, maybe they did and they killed themselves first by accident.
