What do you wear for winter backpacking in below freezing conditions? Lots of layers or just a few big pieces of insulation?

I'm looking for a waterproof insulated jacket and pants but I have no idea what to get. I'd mostly be walking with Yaktrakks. It should be warm enough to stand around in camp a bit also.
