I bought a foot powered stone wheel kinda like this at a garage sale for 80$
if you ever have the opportunity to pick one up you should jump on it I use it for everything from kitchen knives to lawnmower blades

Once upon a time maybe but nowadays you can learn far more than you ever need about sharpening on youtube so it's about as easy as buying knives. 50%+ may never sharpen their knives but not 98%.

I always do it by hand and I'm not very good I'm gonna look into getting a sharpening jig do to it right on some of my better knives. The only ones I sharpen are my daily beaters. I learned by sharpening chisels as a deckhand so my form is pretty brutal.

DMT diamond sharpener is just as good as a whetstone and zero maintenance or hassle. I like maintaining my knives, i dont want to have to maintain the tool for maintaining a tool. Finish with stropping on leather with an abrasive polish for razor sharpness.

Guide is cheaper. It’s just a wedge of plastic you out under your blade.

I have a Lansky jig and love it. I suck at freehanding and now all of my knives are razor sharp with clearly defined angles.
Highly recommended. Would buy again

I've used one and wasn't a fan. Too coarse for good sharpening, and too fine/slow for stock removal. Could be good for setting an edge if something is absolutely dull as hell but I'd rather just get a $40 combo water stone

I can use it in field, doesn't need to be wet, get's my blades shaving sharp.

diamond sharpeners are about twice the cost of a good whetstone, but if you like whetstone sharpening and hate the hassel of them, there worth it. I use pic related for all my knives and machetes. Works just like a whetstone but dont need to do anything other then wet wipe metal grinding dust off it every once in a while.

Is that the same one you have, because I could definitely be wrong about this, but I'm pretty sure those are for grinding down a very dull blade before the final honing. My kit came with a piece that looks like that, and that's what I've been using it for.

Yea if its not the exact one it looks just like it. Mine is double sided, course and fine. Course side will grind down very dull or chipped blades, the fine side does as well as a whetstone for me. Then i finish with stropping on leather. I usually skip that with machetes, though sometimes its cool to get them razor sharp and ill strop them too. Ill re strop if imma use the knife for delicate or precise cuts. I used something else for honing. I usually only hone in between sharpenings for maintaince. I do that a lot with kitchen knives, before or after use ill conditon them on some honer.

I have exactly the same stone anon and knife, and if you live near I would offer to come show you how to sharpen your knife with it if there wasn't the lockdown and stuff.

Firstly, use the other side of your stone to start getting the fil sharp on the opinel. The ardennes coticule has a too high grain to fix big errors on the fil of the blade if it is too degraded or worn off (whether by oldness, or by improper sharpening before).
Also use more water to not clog up your stones pores should be completely filled with water as you sharpen.

As for technique, this video explains it all if you speak french (which many clues in your OP and filename suggest you do)

There is no faster manual way to get an apex that will push cut newsprint across the grain at 90 degrees but still has a good amount of slicing aggression.

Powered sharpeners should be avoided at all costs unless they have active continuous water cooling like a Tormek because they'll burn a few microns depth worth of steel on the edge, which is enough to significantly worsen edge retention.

I like a ceramic sharpening rod for regular touch-ups.
Allows you to sharpen both sides alternatingly without the need to flip the knife or change hands and works well with recurve or worn out blades. I'm probably getting a bit of convex on the edge but if it shaves hairs and cuts tomatoes under its own weight, it's sharp enough for me.

I fill a paint can with water and use my 250w bench belt sander with 200 grit belt.
Very risky due to overheating but I got the hang of it. I briefly dip the blade into the water after every pass. When I have apex i use a victorinox honing stone and then a piece of leather. For edge maintenance I use a 6000 grit pocket stone.

Shitty $1 sharpening stones from ebay (the thin ones made for the chink sharpeners. I use 2 stones actually)
1000 and 2000.
After the stone I use a strop, with a bit of...chink polishing paste from ebay (not amazing, but works).
It works well for me, but I mostly use cheap knives with cheap stainless steel (420C, chinese ?Cr??MoV, 12C27 and stuff like that)

So...yeah...even more of an hassle than what you are complaining about.

I use the same two stones for everything. Kitchen stone for burrs and the wife's knives. Cheap stone for tools and gear. Paddle strop to finish. File for the hatchet and machete.
Works fine for woodworking, no reason to get fancy just for camping.

Develop a consistent natural angle, and take a file to every knife you own. Regrind to a comfortable angle and sharpen from there.
It literally works for everything without a wedged edge. Fuck jig-using elitists.

My old routine used to be:
arkansas stone
hard Arkansas stone
green stropping compound on a strop
diamond lapping paste on the other side of the strop

But to be honest these days I can't even be assed to deal with whetstone maintenance, sandpaper stapled to a wood block works 90% as well, with no maintenance, just toss the paper after a couple sessions.
Diamond lapping paste is fucking amazing though.

The green stuff is like 10 micron vs the diamond paste 1 micron stuff, the difference between hair shaving sharp and hair whittling sharp.

Unless your knife has crazy edge retention it's not really worth the effort to maintain a hair whittling sharp edge.

FYI you can get diamond lapping paste in a variety of micron sizes.

The green stropping compound is chromium oxide suspended in wax, which also comes in a variety of micron sizes, but it's generally bigger than diamond, I think around 50-10 microns. However, chrome oxide particles are more rounded, so they'll give a smoother polish for any given size, while diamond is edgier and leaves the blade with more of a "bite".

Different anon here,
It works fine and leaves a acceptable working edge but doesn't leave a polished edge with the cups I have access to. For that I strop on leather. If you have different types of ceramic mugs you can easily figure out which is best.

Stones. Doesn't matter if diamond, ceramic, or whatnot. A flattened brick works all the same, just low grit (still can get razor sharp off one). Really no hassle and is very quick when you know how.

I've kinda ditched stropping on leather and compound. I just use cardboard to strop now.

I never form a burr. Rather, I do both sides evenly and gently, and let the apex form naturally.

Get a Norton stone in a low grit and a king water stone in a high grit. Buy some cheap but reasonably quality knives and practice. If you can't manage this then jsut get a lansky system or equivalent.
