7mm-08 is a great round. I think it's better if you reload for it personally because the available ammo at stores doesn't take advantage of a 7mm (better BC). I think a 7mm-08 with a 160gr Nosler Partition would be a heck of a light weight all-around elk & mule deer gun.
Regarding the magnum calibers and lack of ear protection, yes, this is a very real thing. Many people put muzzle brakes on their magnum rifles now, but if you ever shoot one without ear protection, it's going to SUCK. Your ears are gonna be ringing for days.
I've got a soft sport for 7mm cartridges, particularly the 7mm Rem Mag. I like loading 168gr, 175gr, and 180gr for the ole 7mm Rem Mag and it's a great option for elk in the mountains and for those longer shots past 300 yards. Of course, shooting 20+ rounds of 7mm Rem Mag loaded with 180gr bullets isn't exactly "pleasurable" due to the recoil. Recoil is real and it affects people. Like I said in my post, getting good at shots past 200 yards means practice, lots of practice. And practicing with a rifle that stomps you isn't going to make you a better shooter, which is why I recommend people go for 308, 7mm-08, 6.5 Creed, etc. for all around rifles that they can practice with regularly and not become recoil shy.
