I haven't lived there specifically, but I've been hiking around Stone Mountain Provincial Park and Northern Rockies Provincial Park, and I've lived in northern SK for a few years and been up to YT for a bit. Northern half of BC/AB/SK/MB is godlike for fishing if you have a boat or canoe, and of course amazing hunting opportunities.
If you're from Ontario or southern BC or something you can expect it to be a fair bit colder than you are used to in the winter. Natives will "borrow" your shit if you give them a chance, guaranteed. Make sure your vehicle has a block heater. Ideally you have a 4WD truck but you can still have fun with a decent SUV. Property in the north half of BC is pretty cheap by Canadian standards (for some reason YT becomes more expensive again), so if you're thinking of staying for a while look around. Grocery stores will probably be shit, so if you like to cook and have any specific items you like bring some with you or find a source to ship them (like ethnic spices/sauces).
The parks that exist have nice hiking trails if you want to hunt for them, but they are far fewer and less defined than in the big attractions like Banff. Expect to need to map and compass. I did something like 10 nights in Stone Mountain, only saw 2 other people while I was there and they were accross the valley from me. Much more choose-your-own-adventure out there. Don't litter and no one will have anything to complain about. Cariboo sightings are magic.
