So for a SHTF scenario or just for being able to have fun on the water without needing to go to a tourist town and spend money, what inflatable boat setup should I have?

I wouldn't think that an inflatable boat would be any good in SHTF. If you believe that somethings gonna happen soon, I'd get a real boat and start a liveaboard situation. Pay your docking fees so you have water, power, etc. and you're good.

Then when The Thing happens, cast off and leave it behind.

The only "inflatable" worth bothering with is a SIB. Basically it's a RIB but without a solid hull, with the keel being formed by an extra hypalon tube under the deck.

I've seen some of those small zodiacs in use that can be paired with a small 5hp motor. Not exactly going to be backpacking in anywhere with it, but it's good for launching in areas that have no proper boat launch. Anywhere you can put a canoe you can put a zodiac.

This boat was 100 credits, stows in my van in 15 minutes. I can be on an island full of feral ponies I can exploit for milk/companionship in under two hours.
