I dunno if this works for your climate zone and geography but I've been trying to explore along rivers and other trails that would be really overgrown or muddy or have lots of flies/insects/mosquitos are great to do in the winter.
Also try to find trails that start on paved roads if you are heading out to snowy backcountry unless you have four wheel drive + snow tires if not studded tires or chains.
Try heading south or east (here in the mid atlantic) towards the shore to access warmer weather. Even a 2-3 hour drive south or towards the coast can yield slightly warmer winter weather.
