This knife sharpener with carbide and ceramic sharpens my knife better than any sharpening stone. Is my sharpening technique with the stone THAT bad because the difference is quite big.
pic related something i found for like 5 euros

your stone does a good job and makes your knife sharp.
but your technique is bad so your knife isnt sharp?

how do i improve it? i use the plastic sharpener with a ceramic and carbide part, but my stone, i am worse with it because it requires technique to use, the plastic sharpener doesnt need technique

You need a sharpening guide for whetstones or a guided field sharpener until you develop the muscle memory need to keep an even edge.

Nah, anyone can eyeball within a few degrees.

The main thing is that the angle is about the same on both sides (not that asymmetry can't apex, it's just silly in the end outside of chisel grinds). More experience equals faster shaping.

If you check the bevels on factory knives, you'll find that they're often not fully symmetrical. 1-3 degrees difference per side is common; it all depends on how much care the worker puts in on that specific blank at the time and if QC thinks it's good enough or not.

Even chips are found on quality factory knives now and again.

i really dont understand what youre asking. maybe it just cuts steel faster, maybd your steel was hard enough to not work well against arkansas or other conventional stones. maybe those stones were old. mayeb anything you used to sharpen were old or not suited for whatever steel you have. there are so many variables that could affect what stone you should use, and youre giving too little information. thag being said, i enjoy diamond plated nickel "stones" myself. i enjoy how fast it can cut very hard steels and its great for someone that knows how to hold a single angle. thats just me though

Guides only exist to extract money out of retards, and the field sharpeners you refer to only exist so that knife companies can extract even more money out of retards. Anyone can use these stones effectively as long as they know how to move the edge along them. Getting the angle 1000% right is not important.
