The potato box is a meme. You won't grow that many potatoes in a box, and the only reason to do box potatoes is if you're disabled and can't dig them from the ground or if you're in an apartment and you really like potatoes more than expensive crops like snow peas, tomatoes, or peppers. Give your plants adequate space for their roots to grow and stop min/maxxing and square foot gardening.
If you are super beginner, buy a mint/cilantro/chives/other herb plant and keep it alive. Fresh herbs are expensive but great to cook with. Once you are comfortable with that, expand your herb garden or go for tomatoes, peppers, or snap/snow peas which cost a lot and taste a million times better when homegrown but don't take much space. Continue adding a variety or two each growing season rather than digging a huge garden and trying to learn everything at once.
