No real effort or supervision required.
Requires 1 pot
Butter if you have it
2 white onions
2 red onions
5-6 tomatoes
1 garlic
½ bottle white wine
Fresh mussels
A little pepper
Chop onions and garlic however you like them.
Get garlic and white onions browning.
Halve tomatoes, cut out the bit at the top.
When the onions are brown, add tomatoes, red onions, enough wine to just cover everything.
Bring to boil.
Pluck skin off tomatoes and mix it up a bit. (Squash the tomatoes) Add a bit more wine, bring to boil.
Throw in mussels. Mix them up a few times during cooking.
Drink remaining wine.
When they’re open, they’re ready.
Maybe add some pepper or whatever you like with seafood.
Take cooked mussels, pull off ½ shell.
Arrange on plate.
Put a spoonful of vege mix in each shell.
Accept compliments.
The sauce is just a sauce to cook it in and add flavour while eating- not intended as a stew.
This obviously isn’t an exact science - depends a lot on size of veges and size/qty of mussels.
Tastes much better than it’s simplicity would suggest.
I appreciate you don’t all do coastal trails, but I do and this is a staple.
