If you wanna go the Dehydrated route, I highly recommend eating a different food every night and try to limit it to being just a dinner option most days.
Oatmeal, granola and grits are great breakfast options. Bread and tortillas can go a long way towards making the dehydrated meals a million times more enjoyable.
I've stopped paying attention to food weight personally, The first day out I always bring a frozen steak or bratwurst with and some pre-prepped asparagus in a ziploc bag for the first dinner than I carry some frozen breakfast sausage or liver mush and eat it with grits and toast the first breakfast.
Protip: Farm fresh eggs can last up to a month as long as they're never refrigerated and are easier to find locally than you'd think. Also, a salt/pepper/spice shaker and a stick of unsalted butter should be in every Backpacker's food arsenal.
