When I was in the field while serving I kept a can of instant coffee. I've got a percolator like your pic, that I use at home occasionally, but haven't actually brought it out camping. Presently planning to just bring some instant coffee with me until I'm comfortable enough to add the weight of a perc.

i got a new percolator but its a pretty cheap ass one that cycles the beanified water back into the regular water and just keeps going and bubbling and shit. it will work for what it needs to do... I think it will be the smell and sound in the morning while coming off the acid that will really make it beauty

I just grind coffee beans coarse and put them in a metal tea strainer ball, steep for 5 minutes in boiled water. Way lighter and easier to clean than a percolator or French press

Percolating is a pretty harsh extraction. most methods aim for a few degrees F below boiling, sometimes much lower. Percolating constantly pours hot liquid over the grounds; that results in many of the off flavors being pulled off. The method does not lend itself to good temp or time controlto get the nice flavors and avoid the bitter.
At the very least get some very coarse grind and try not to let it just boil away.

i know of no other methods

Immersion is a category, his method is most often called cowboy coffee. No filtering of the grounds is involved.
French press is still an immersion method that involves pressing down the floating grounds with a mesh filter. Aeropress is basically French Press plus a paper filter.

A better method is to mix the grounds with an egg before dumping them in the pot. Boil is for 10 minutes, remove from heat, throw a cup of cold water in, and wa la, it sinks to the bottom.

10 minutes of hard boiling will certainly over extract your grounds. You'll want to take it off the fire once it gets to a boil, and depending on the coffee, steep for 3-6 minutes.

Cowboy coffee is a pretty ambiguous recipe as long as it involves coffee and a pot. That's why 5 people will probably give you 5 different ways to make cowboy coffee.
The OG cowboys would keep adding grounds and water to the pot all night until the pot filled up with sludge. I'd imagine that everything after the first cup was extremely bitter and burnt tasting.
