There are a wide range of forest types throughout the state, and the Ozarks are an absolutely unique geographic feature. If you haven't been to the Ozarks, they will really surprise you once you take the chance.
That being said, the Northern portion of the state is nice at best. A lot of that land is either glacial till plains or has just been graded out flat. There are still some parks and conservation areas with forests and hills and lakes.
Missouri has a fantastic state park system, and most counties have a fantastic array of parks, conservation areas, and wilderness. There are actually seven wilderness areas in southern Missouri, and they really are wild. Fuckin' boars, man.
tl;dr, Missouri is extremely varied and naturally beautiful, with tons of opportunities for cycling, hiking, horseback riding, and backpacking. We also fucking love our guns here.
