Any bivy recommendations for snow?
Talking middle USA winter, not Canada snow.
I'd like to buy one that closes at night like pic related but I've never tried out a bivy before.

Anything I should know?
Also can you substitute a yoga mat for a regular insulated mat?

They get the job done. Personally I like keeping most my things in the tent and out of the freeze or rain, but you can’t beat the portability of a bivy.
A yoga mat has R rating of 1 so you’ll be uncomfortable if it ever drops below 50.

In winter a bivy + sleeping bag would probably be warmer than most tents + sleeping bag, unless you have some kind of heating system in the tent like candles or lanterns.
Bivouac sacks are good for winter, in the warm they aren't as good, they're especially bad in humid climates.
Remember bivies have very limited breathability.

If you're on a snowmobile you could try a canvas bedroll. Canvas is more breathable than most (all?) bivy materials, at the expensive of weight and size.

A bivy is fun but does have some downsides. It adds about 10 degrees to your sleep system compared to using just the sleeping bag. Condensation can be a problem but if you don`t breathe into it all night you should be fine. I have the OR Alpine bivy and it is nice because it is gortex and can be either zipped up or left open with a mesh net. I have used it in PA winters and summers and have been fine. Something to keep in mind is that the one place bivies fail is getting in and out while it is raining. So if you know it will rain u may want to pitch a tarp or poncho so you can get out.

Get a breathable one with a hoop to keep it off your face.
Carry a snow shovel so you can make a wall or trench to protect from wind.
You’re better off making a cave or igloo, but they certainly do the job.
They fucking suck in the rain though.

If you’re looking to save weight, a goretex bivy is about the same weight or an ounce or two heavier than a dyneema tent. The advantage of the bivy is that it packs down to half the size and is half the cost. Obviously a tent is better for sleeping in though. If you have the money and packable space isn’t an issue, I’d go with a tent. Pic extremely related (zpacks duplex and an OR alpine bivy)

get a water tight bivy with a bug mesh you can leave partly open for venting, better yet with 2 vents foot and head, get collapsible cot and put your sleeping bag on the cot, now you are good down to neg 45 Fahrenheit for a couple hours, ALWAYS do layers and have backup heat(propane ceramic heater, wood stove with fan(blows hot air into vent), hot pads, hot water bottles,etc)

Probably, it’s all much the same though in my experience. If it’s from a reputable brand it should be fine.
I’ve READ that you’re better off with a regular nylon bag inside a breathable bivy to let most moisture out. Something to do with vapour losing heat passing through first layer, condensing on second, but I don’t know how to science. I’ve always used some sort of breathable bag in bivy, typically get slight (insignificant) condensation if outside in the snow. It just freezes, and shake it out it the morning. Worse but still not problematic in the wet, but think I’d stick with breathable bag, currently have dryloft bags. Nice if you’re in a tent against a slightly damp inner.
There may be better materials, but basically it’s what we get here, so it’s what I’ve got.

This is what I have.
Older model but identical design.
Mine is Reflex top and bottom.
No pole over head sucks in the rain, you have to sleep on a slope or sitting up to prevent water pooling on top then pouring in when you move.
Zero issues in the snow though.
It’s only 2 layer fabric too, so a stern look is enough to put a hole in it - really only designed for alpine, I definitely misuse it a bit. Have mostly used it in the bush when caught out in shit conditions going to/from high country.
It’s good at what it’s designed for though.

You want to travel light. That's it. A bivy is much lighter and more compact then a tent. If you value those two things over the comfort of a tent then you go with the bivy.

I thought you were being sarcastic because this feels like common sense.

OP's bivy has poles, but a real bivy doesn't take time to setup up.
Its just a bedroll.
Bivy sacks take up less space when "setup"
A bivy sack takes up less space than a cheap tent when moeny's an issue
A bivy sack adds ~10 degrees to your sleeping bag
A bivy sack protects the sleeping bag, especially when tarp camping

I usually just cowboy camp with my sleeping bag on a tarp, but bring a Borah bivy with me in case it gets chilly or the bugs come out

probably the biggest reason is that the parts are separated. With a light tarp and bivy, I can take either by themselves. A lightweight tarp/bivy combo can be very versatile, opened or closed, and just requires space to lay down. A very light 1 person tent lacks space and if it's single wall it only has door open/door closed, and with dyneema very expensive as well. It's def not for everyone, but often it's just nit-picking shelter design as the components all do about the same thing.

what about a bivvy-tent like the ionosphere? I know it wouldn't stand up to heavy snow on its own but how does it stand up in the cold without active snowfall? I'm thinking about getting one.

My biggest problem with the Ionosphere is that it is not free-standing. You need to stake it out for it to actually work. This means if the ground is frozen or all rocks it will not stand.

just get a collapsible cott anon, they raise you off the ground, so you don't lose heat continuousy, they pack down to nothing, and they add several degrees in a closed space, or reduce your temp in a good breeze(current hot weather), get a sleeping bag rated at least 10-20 degrees colder than you expect/have experienced in your camping region, that and the cott and bivy will keep you warm unless you are starving/or sweating a storm. Wood stove will keep you warm BUT you will tire yourself out carrying all that fuel and having to constantly top off the stove with more fuel during the night/day.
Just remember to drink hot liquids during the winter, and cool/cold liquids during the summer. Keep your internal temp stable.
