E.g. if the thing holds 1000 litres, and it leaks 1L in a couple of weeksit doesn't really matter much.
You can also "paint" the inside with waterproofing stuff.

But there's nothing there that would really make it worse than other options for drinking water.
It's dark and covered. No light or bugs/animals can get in, the water stored there would keep for a good while.
Those things are actually a pretty good option for cheap DIY water storage, that's why they've been used since cement was invented.
