Definitely look into inflatables. They've come a long way, just be sure not to skimp on price. Not sure what you'd do for propulsion because I don't know what you can do with a bike. Maybe you can move some oars or a small trolling motor.

I know there are "emergency oars" that you can fit in tight places but I'm not sure how much fun those will be. Maybe you can find some sort of takedown model that breaks into a few pieces for easier transport.

It really depends on what bike you have.
Some can pull a trailer and have plenty of power to move a small boat

most cars can pull 1000lbs or so. Jon boats are cheap on craigslist. Find an old outboard and you're good to go. Some uhaul facilities have a side hustle attaching trailer hitches to cars.
