It beads water due to the tarpaulin, but to make it waterproof all you have to do is spray it with a Silicone Spray or wax it
As to ops question, I wear gorka almost everytime im out, I love the pants due to the tick guard that goes down in the boots. The fabric is very loose so it makes getting around in easy and cool, with plenty of room for additional layers beneath. It has two layers of fabric where it counts, knees, arms, ass, etc. Ive never had any issues with noise, and for $130 for both the suit and the pants Id say what your getting is well worth the price.
However I do wish it had more blowout protection.

I wear thermal underwear but only when Im at camp, not good to sweat during the winter. It keeps me quite warm with just an additional layer underneath in around 20 F, below that I keep it on.
All depends on the weather.

Wool flannel is sadly unused and poly flannel a travesty.
Turns out that overall is actually lined in polyester quilt, so pretty good for what it is.

I've got an SSO gorka I've had for almost 10 years, I love it. If you want to waterproof it, get some wax or oilskin reproofer. I'll often just wear the pants with a lighter top or jacket though, especially in summer here in Aus.
My favorite combo is rocking the gorka pants with a partizan jacket.
Fork out and get SSO, they are built to a much higher level than other brands.

that's the problem with them is that they change every year essentially. Slavyanka is one of the best but they don't make gorkas anymore, BARS was considered the best around the same time Slavyanka was, now BARS is on par with new SSO, but the best current ones are considered to be the best current ones but they don't necessarily look like a traditional gorka, MODOX is what im wearing in the pic and its pretty meh comparatively as it was a 2018 one before they reformed and it has weird things like waterproof tech pockets. I also have 2 different 05 Gorka R's from SSO, and 08 gorka Ein Kukla from them, and ANA gorka 1 for fun, and that MODOX in Skol.

Listen senpaitachi gorkas are fucking great and I love mine, however. They're heavy, which is a good thing if you're wearing it, incredibly abrasion resistant. I wouldn't want to wear anything else for off - trail use, shits caught on barbed wire and not torn. so if the weather permits you keeping it on all the time, great. But if you have to try make room in your pack for it you'll see what I mean. They breath better than goretex and are nice in the cold with insulation layers underneath. As well as fine in warmer conditions
As for rain, they don't deal with it too well. They'll shed water if they are treated with waterproof spray so if your location only has short showers or mostly snow then you're fucking good. I wore mine constantly in Scandinavia where the rain really isn't that bad and it's usually just gonna snow instead, but since coming back to the UK where the weather is constantly changing I don't really use it as much as I'd like. Rain is heavy, constant, and regardless of how much waterproof spray you put on it'll get fucking soaked through.
Definitely pick up a gorka if you know it'll work in your climate

you dont necessarily need a sewing machine for most tasks, unless you are joining two "free" patches of fabric

best advice i can give you is how my grandmother tought me how to sew, get some dirt cheap army surplus pants/shirts, not talking that primo shit, im talking moth eaten crap

learn to mend tears, when i had mended a tear she would tear a button off, one by one until i learned to sew them on properly, while guiding me ofcourse
"turning up the pant leg" where you properly size it to a shoe or a boot etc etc
first joint on your thumb for shoe, tip of thumb for boot

this makes it read like in WW1
