The Road universe wasn't completely dark, so you are still getting sunlight, just less. Of course we're not talking about a delicious buffet and most mammals are dead (scavenging mammals are the last to go, enjoy eating mouse for years).
Humans would burn through most edibles very fast, but there are likely to remain caches and stashes of forgotten bulk and as long as you only need to feed yourself you could stumble across a years worth of (minimal) sustenance in one lucky find.
If you have the will to live you will eat people. You don't need to be a murderer to do so, people will be dying left and right from broken bones to common colds. Remember "Alive"?
There's also the fact that as long as you have energy you can have growhouses. Again, obviously there will be a fast depletion, but again you will find stashes and with some ingenuity you could be farming tomatoes and potatoes and whatever else.
You need to be able to get away from people but also scavenge the remnants of civilization. High mobility, low visibility.
Traveling on roads seems idiotic, they will be clogged up and dangerous. Given the darkness winters will be long most everywhere, get a snowmobile or skis.
The book is just an outlet for general misanthropy. If you want to be that way you can just look around yourself today and lament the fact that for all our technology and progress we're still a shitty race of shortsighted and exploitative parasites. Or you can just kick back and stream some tunes while we wait for the postapocalypse.
